Dorito Taco Salad

Ingredients:

For the Salad:

Ingredients: Quantity
Ground beef 1 pound
Taco seasoning 1 packet
Water ¼ cup
Romaine lettuce, chopped 1 head
Cherry tomatoes, halved 2 cups
Shredded Cheddar cheese 1 cup
Red onion, diced ½ cup
Black beans, drained and rinsed 1 can (15 oz)
Corn kernels (fresh, canned, or frozen) 1 cup
Crushed Doritos (nacho cheese flavor) 2 cups

For the Dressing:

Ingredients: Quantity
Catalina dressing (or ranch dressing) 1 cup
Lime juice (optional) Juice of 1 lime

Instructions:

  1. Cook the Ground Beef: In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula. Drain any excess fat. Add the taco seasoning and water, and stir until the beef is well coated. Let it simmer for 2-3 minutes. Remove from heat and set aside to cool slightly.
  2. Prepare the Salad: In a large salad bowl, combine the chopped lettuce, halved cherry tomatoes, shredded cheese, diced red onion, black beans, and corn. Toss until evenly mixed.
  3. Add Beef & Doritos: Add the seasoned ground beef to the salad mixture and toss to combine. Just before serving, add the crushed Doritos to maintain their crunch.
  4. Dress the Salad: Pour the Catalina dressing over the salad and gently toss until all ingredients are well coated. If desired, add a squeeze of lime juice for extra tang.
  5. Serve: Serve the Dorito Taco Salad immediately, while the Doritos are still crispy. Enjoy!
