Milk in Scrambled Eggs: The Small Habit That Changes Everything

It sounds like a harmless kitchen habit: crack the eggs, add a splash of milk, whisk, and cook. Many people grew up watching their parents do it, so it feels “right.” But chefs and food experts have long debated this tradition—and the truth surprises a lot of home cooks.Adding milk to scrambled eggs does change the texture, but not always for the better. So who’s right? If you like thin, pale, cafeteria-style eggs, milk will get you there. But if you want rich, tender, restaurant-quality scrambled eggs, skipping the milk may be the simplest upgrade you never knew you needed. Sometimes better cooking isn’t about what you add—it’s about what you leave out.
